New Outlook and Outlook web will soon allow you to customise folder icon colours. Due late March 2025.
Details
To change the colour of a folder icon (1), hover over the folder name, select the three-dot menu (2), select Change colour and then choose a colour (3). In this example, I have chosen Cranberry (dark red) for my Inbox:
To turn off the colour, follow the above steps and select Automatic (4).
