TL;DR
You will soon be able to use Draft with Copilot in Microsoft Word with the on-canvas Copilot menu and existing text, a list, or a table. Due late April to August 2024.

Currently in Word, Draft with Copilot is available when adding new content to your document:
This is the option you have for existing content:
This update appears to add the Draft with Copilot option to the above menu when highlighting existing content.
Availability
Due April to August 2024 in Word web, Win32, Mac and iPad (in that order).
