TL;DR:
Microsoft are adding a new feature to the profile card in Microsoft 365. You will be able to add pronouns directly to your profile card in Outlook on the web and Teams. Due late March to early April 2023.

Details:
The ability to allow you to display your pronouns (the words we use to replace someone’s name in a sentence, such as “he,” “she,” or “they” in English) on the profile card will be OFF by default. Your organisation can switch this on and then it is optional for users to add pronouns to their profile.

Pronouns will be shown next to your name in the top section of the profile card in Outlook on the web and Teams. Pronouns will be visible to everyone in your organisation.
