TL;DR
You can now delete your Copilot for Microsoft 365 interaction history by going to the Privacy page on myaccount.microsoft.com.

This is an improvement over the previous process, which required your admin to file an online support ticket with Microsoft on your behalf. Available now.

Details
This feature does not override any existing Microsoft Purview functionality your organisation might have implemented, such as retention policies or legal holds. 

This Copilot interaction history is the same information that your admins, with the appropriate permissions, can view by using Content Search or Microsoft Purview. Remember, you are at work, and it is quite reasonable that your work actions are auditable.

Your organisation can’t hide the Delete history button, which you will see the button even if you haven’t been assigned a Copilot license.
